Mamma's Pizza and Restaurant is back and better than ever. After a three-year absence, amiable owner Spiro Ploumes is back, to the cheers of the regular customers he serves. Many customers and web sites tout "Mamma's" as the best pizza in Bayside. Spiro says it's the combination of fresh sauce, made in-house and quality cheese, along with a special baking technique that makes an extra crisp crust which is tender to chew. Pizza aficionados comment on the sauce, which is mildly seasoned and not acidic like others. Mamma's is more than just pizza. Entrées in seafood, chicken, meatballs and veal offer complete meals, to eat in or to have delivered.

Some of Mamma's signature pies include the classic Bianca with white cheeses only, Margarita with a smattering of fresh tomato, mozzarella and basil leaves and the meat lover's pizza topped with pepperoni, meatballs, sausage and bacon. I like the oldfashioned Grandma pizza, with its square crust and zesty tomato sauce. The Mexican style pizza is gaining in popularity thanks to spicy chipotle chicken or steak, black beans, pico de gallo, guacamole, jalapenos and sour cream. They even make healthy whole wheat pizza, available by the slice with your choice of toppings. Cheese pies start at just $11.50 for a 16-inch pie. To help save money, there are Family menus which include an extra- large pie, six Buffalo wings, six mozzarella sticks, and six garlic knots with a large bottle of soda for just $23.95. Pizza and wings combos and pizza and gyro combos satisfy a hungry crowd at home, for just $19.95. Look out for Mamma's coupons in your mailbox. They will even match competitor's coupons.

At lunchtime, the display cases are packed with freshly baked vegetable pinwheels, sausage rolls and rice balls. A large selection of freshly made wraps includes the grilled chicken Caesar with tender chicken and Caesar salad, "Mamma's" wrap with chicken, sautéed spinach and mushrooms and the Mexicana wrap with spicy grilled chicken, tomato, avocado, salsa and sour cream. The flavorful grilled shrimp wrap keeps it light with Romaine lettuce, red onion, tomato, peppers and avocado.

I took special note of the delicious bread they use, with a tender crust and slimmer profile to make biting into these tempting sandwiches easy. "Junior" heroe’s are made on smaller eight inch loaves and start at $5.25 so it's easy on the pocket. Enjoy a juicy burger made from 8 ounces of 100% Angus beef and can be topped your way and served deluxe style with crispy fries. Healthy salads, such as the house, Caesar and Greek, are tossed to order and can be topped with grilled chicken or grilled vegetables. I'm told the California salad is one of the most impressive, tossed with chicken, avocado, red onion, cucumbers, croutons and vinaigrette dressing ($7.50).

First-time customers are surprised by the quality and presentation of the entrees served. Veal or chicken Marsala and chicken Francese are among the most popular entrees and with good reason. The meat is fork tender and served with restaurant-quality sauces, served in abundant portions. The price of entrees ranges from $9.95 - $12.95 and come with bread and choice of linguine or penne. Pasta dishes start at just $6.45 and include the popular penne alla vodka, fettuccine carbonara with smoky bacon and cheese or meat tortellini with the house's own tomato sauce.
